I found you through today's post from Garden Muse. We love frittata here too, but I have to say I'm intrigued with your beetroot ravioli! We make ravioli, but it never occurred to me to use beets! Do you just use the beet juice, or mashed roasted beets in your raviolis?

I pureed roasted beets and mixed them with a bit of ricotta cheese. (You could also puree some cottage cheese or tofu with the beets) They were delicious, especially paired with the squash ravioli.
